Cheesy Garlic Buns
These cheesy garlic buns exude a fabulously subtle garlic flavor – one that runs through every bite of these softy & fluffy rolls.
Once again, my love for Garlic translates into a recipe created exclusively for carbaholics such as myself.
These cheesy garlic rolls are my take on the regular dinner rolls and garlic bread. After the highly popular how to cook garlic bread post, I bring you yet another bread recipe made from scratch. Only this time, they are in the form of dinner rolls. And flavored with garlic and cheese and mixed herbs.
The garlic flavor in these rolls (or buns, as I like to call them) aren’t too overpowering. It is subtle, yet distinct. The cheese is just right – it enhances the flavor and provides another layer of texture. And overall, these rolls are just fluffy and delightful. The concept of making these rolls is pretty similar to most bread recipes; and yet – you’ll find that a few changes in the dough can give you a wonderfully fragrant bread!

Cheesy Garlic Buns
- 1 cup All Purpose Flour (maida)
- 1 teaspoon Active Dry Yeast or 3/4 teaspoon Instant Yeast
- 1/2 teaspoon Sugar
- 1/3 cup Water
- 1/5 teaspoon Salt (adjust to taste)
- 2 teaspoons Garlic Powder OR Garlic Paste or minced Garlic (Refer note)
- 1/3 cup Grated Cheese (Parmesan or Mozzarella)
- 1 Tablespoon Plain Yogurt (curds) or Sour Cream
- 1/4 cup Vegetable Oil or Melted Butter
- Egg-wash or Melted Butter (for brushing on top)
- Grated cheese of your choice
- Mixed Dry Herbs
- Garlic Powder works the best, since it blends well into the dough. However, you can also use fresh garlic paste or finely mince (grate) Garlic cloves and use the same
- If you want additional garlic flavor, increase the amount of garlic (and vice versa)
Activating the Yeast
- Warm the water and dissolve the sugar in it. When the water is lukewarm, sprinkle the yeast
- Let it rest for about 203 minutes or until the mixture starts to foam uo
- Mix together all ingredients – flour, salt, garlic, cheese, oil / butter, cheese well.
- Add the warm water mixture and mix until the mixture comes together
- Knead by hand for 15 minutes or so (or 8-10 minutes using electric mixer) until you have a smooth and pliable dough.
- Oil a mixing bowl and the dough well and place it in the bowl. Cover with a plastic wrap or wet kitchen towel and place in a warm spot for about 1 hour or until the dough doubles in size.
- Grease a baking pan well with oil and sprinkle some Semolina or Cornmeal. This prevents the rolls from sticking to the pan.
- Once the dough has risen, punch it down, divide into equal parts and stretch and roll into neat balls.
- Place each of the rolls onto the baking sheet at a distance of 1 inch from each other.
- Cover with a plastic wrap or kitchen towel and let it rise for another 20-30 minutes or until the rolls have plumped up visibly
- Meanwhile, preheat oven to 200 C
- Brush the top of each roll with melted butter or egg-wash, sprinkle with mixed dry herbs of your choice.
- Bake at 200C for around 13 minutes or until the rolls are almost cooked.
- Add some more cheese on top of each roll (optional) and continue to bake for another 4-6 minutes or until the rolls are fully cooked through.
- Let them rest in the baking pan for about 10 minutes.
- Serve as desired.
- If you are using instant yeast (instead of active dry yeast, skip the above step and add sugar & yeast also to the dry mixture and mix well.
How to store the dough
- Once the dough has risen, punch it down & add to an air tight container or zip lock bag and freeze upto 3 days. Before using, let it come to room temperature & rise for another 30 minutes before rolling it.
How to store the cheesy garlic buns
- They stay well in the refrigerator for up to 3 days. Store in an air tight container. Before serving, warm them up in the microwave for at least 30-40 seconds

Cheesy Garlic Buns – Step by step pictures
Dissolve yeast and sugar in warm water and let it rest for 2-3 minutes until it starts to foam up.
Mix together all other ingredients – flour, salt, garlic powder or paste, cheese, a little sour cream or yogurt, oil. Add the yeast-water and mix until the mixture comes together
Knead for 15 minutes until you have a smooth & elastic dough. Place in a well oiled bowl, cover with a damp kitchen towel and let the dough rise for about 1 hour or until it doubles up in volume.
Divide the dough into equal sized portions. Roll into neat balls and place on a well greased baking pan.
Loosely cover it with plastic wrap or kitchen towel and let it rise for another 20-30 minutes. The rolls should have plumped up well by now
Brush the top with melted butter or egg wash and sprinkle a mixture of dry herbs. Let the rolls bake at 200 C for 12 minutes. Remove, grate some cheese and continue to bake for another 3-4 minutes or until the rolls are completely cooked through.
The rolls should be light golden brown. Let them cool for 5-10 minutes in the baking pan.
Remove the rolls & serve as required.
