Hershey’s Kisses have got to be the cutest candies ever invented. Not only do they taste amazing (I mean, hello? That burst of chocolate in your mouth? Yauza!), but they also effortlessly add a certain cuteness to an dessert they are a part of. For lazy people like me, this is great because we don’t have to spend hours stressing over dessert-decorations!

Inspired from these intensely-chocolaty candies, I decided to make some cupcakes that will knock your socks off! With a basic chocolate cupcake base, I take it up a notch by stuffing each cupcake with a Hershey’s kiss. And then I frost them with an amazing frosting I discovered accidentally. Yep – have you tried combining buttercream and marshmallows and chocolate? You’ve got to do it right now – if you haven’t already!

The best part is that you really don’t need to stress yourself too much. You’re going to enjoy making these cupcakes – just as much as you’re going to enjoy devouring them!

P.S: Hello dear foodie friends. I’m back after a long break. I feel obligated to tell you WHY I’ve been away. Call it a writer’s block or a low-on-motivation phase, I just wasn’t feeling so excited about anything for the past few weeks. It took me almost 45 days to snap out of the depressing times to realize what I’ve been missing out – viz – amazing food waiting to be shared with the world! So I’m back. Description

Soft Hershey’s Kisses Cupcakes slathered with chocolate marshmallow buttercream

Ingredients

For the Cupcake

  • 1 cup All Purpose Flour (Maida)
  • 1/3 Cup Powdered Sugar (adjust to taste)
  • 1/4 cup unsweetened Cocoa Powder
  • 1/8 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Vegetable Oil
  • 2 Tablespoons Melted Butter
  • 1/3 cup Plain Yogurt or Sour Cream
  • Milk or Water (to loosen the batter – if required)

For the Chocolate Marshmallow Buttercream

  • 1/4 cup Marshmallows (around 46 marshmallows)
  • 2 Tablespoons Cream or Milk
  • 1/4 cup Chopped Chocolate or Chocolate Chips (dark or semi-sweet)
  • 1/4 cup Butter – soft at room temperature
  • 1/3 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract

For decorating & stuffing

  • Hershey’s Kisses candies – unwrapped

Instructions

For the cupcakes

  1. Line cupcake molds with liner. Preheat oven to 160 C (140 or 150 C if you have a convection oven)
  2. Sift together dry ingredients – flour, sugar, cocoa powder, salt, baking powder and baking soda. Mix well.
  3. Add the wet ingredients – oil, melted butter, vanilla extract, yogurt / sour cream.
  4. Mix to form a smooth and lump free batter. Do not over mix or you’ll end up with a bread like consistency.
  5. If the batter is too thick, you can loosen it up by adding a couple tablespoons of Milk or Water
  6. Fill each cupcake mold upto half-way full with the cupcake batter. Bake at 160C hot oven for 25-30 minutes or until the cupcakes are fully cooked through.
  7. Remove the cupcakes and let them cool completely

For the Chocolate Marshmallow Buttercream

  1. Cream together butter and sugar and vanilla extract for 2 minutes to form a smooth frosting. Keep it chilled
  2. In a microwave safe bowl, add the marshmallows, cream / milk and chocolate and microwave for 2 minutes. Stop every 30 seconds, remove and mix. Mix well to form a smooth pudding-like mixture. Keep stirring to cool it down considerably.
  3. Add the chocolate paste to the vanilla buttercream. And mix well to form a smooth and creamy mixture. Keep it chilled until use.

To decorate the cupcakes

  1. Using a thin knife, cut of a small portion of the cupcake from the center. Do not cut all the way down. Just enough to have a small hole. Do the same with all cupcakes
  2. Stuff a Hershey’s Kiss candy in the hole of each cupcake. Close the holes with the cut out portion of the cupcake.
  3. Fill a piping bag or a zip lock bag with the chocolate marshmallow frosting. Pipe out some of the frosting in the center of the cupcake, to enclose the cut out portion. You can frost more if you like.
  4. Place one Hershey’s Kiss on top of the frosting on each cupcake.
  5. Chill for at least 15 minutes before serving.
  6. Stays well in the refrigerator for up to 3 days

Mix together all the dry ingredients. Add the yogurt, melted butter, oil, vanilla extract and mix to form a smooth and lump-free batter.

Line the cupcake molds with liners. Fill cupcake molds with the batter (upto half of the mold). Bake at 160C hot oven for 30 minutes or until the cupcakes are fully cooked through. Keep a watch out from the 20th minute.

For the frosting, add marshamallows, cream and chocolate to a microwave safe bowl and heat for 2-3 minutes. Mix well to form a smooth mixture. Keep stirring to cool it down considerably.

Meanwhile, cream together butter, sugar and vanilla to form buttercream. Add the chocolate marshmallow paste and cream the whole thing together again

Once the cupcakes have cooled down completely, carve out a small portion of the center of the cupcakes. Place one Hershey’s Kiss chocolate in the center of each cupcake (this is optional though). Close each cupcake with the carved out portion.

Fill a piping bad with the cream and pipe out some cream in the middle of the cupcake. Don’t frost too much or it will be overpowering. Place another Hershey’s kiss on the top and serve!
