3 Seed Rice (Sesame, Flax & Cumin Seeds Rice)

Ingredients

  • 1 cup Basmati Rice (any long grain aromatic rice)
  • 1 TBsp Sesame Seeds (til)
  • 1 TBsp Flax Seeds (alsi)
  • 1 TBsp Cumin Seeds (jeera)
  • 1 Bay Leaf
  • 1 inch Cinnamon stick
  • 2 Cloves
  • 2 Cardamom pods
  • Nutmeg (to grate)
  • 2 Green Chilli, slit lengthwise
  • 2 cloves Garlic, minced
  • 1 TBsp Salt (adjust to taste)
  • 1 TBsp Vegetable Oil
  • 1 3/4 cup Water (adjust according to type of rice you’re using)

Instructions

  1. Soak rice in warm water for 15 minutes and drain. This helps rice cook faster.
  2. Heat oil. Add cinnamon, bay leaf, cloves, cardamom & grated nutmeg. Fry for a minute until an aroma comes off the whole spices.
  3. Add green chilli, minced garlic and fry for a minute.
  4. Add all the 3 seeds Рsesame, cumin & flax seeds. Mix well & saut̩ for 1 minute.
  5. Add the rice and mix well.
  6. Add water, salt to taste & mix well.
  7. Let that come to a boil. Close with a lid, reduce to a simmer & cook for 15-20 minutes or until rice is well cooked.
  8. Fluff up with 2 forks to distribute seeds evenly.
  9. Serve hot with any spicy side dish.
