Apple Upside Down Cake
This is the first time I tried baking with a fruit. (Well, I’m not counting the Banana Cake because it was more bread-y than cakey.) An Apple Upside down cake is an elegant tea time treat. (Oh, don’t even bother with the “time to eat” coz we all know there’s no “one” perfect time for a piece of cake!) Honestly, we’re not big fans of “cooked / baked fruit”. The concept is so new around here that when I cut myself a slice of this utterly gorgeous looking cake, I was NOT prepared for the caramel covered apple slice!
I’m still contemplating whether I “love” this Apple upside down cake or not. It wasn’t love at first bite. It was like at first bite. Yep, that sounds about right. So I’m not going to go ga-ga over this cake. But then – please note that this is coming from someone who’s not a big fan of baked fruits. If you love it, then you absolutely should make this cake. If you’ve had Apple Upside Down Cake before, then I can vouch for this eggless version.
APPLE UPSIDE DOWN CAKE RECIPE
Here’s what you’ll need to make the Apple Upside Down Cake –
I. Fruit Layer
Grease and line a cake tin (preferably round) with parchment paper.
Peel the apple and cut into thin, even slices. (I’m impatient & messy. I’m sure you’ll do a better job of slicing the apples than me)
Lay the apple slices at the bottom of the cake tin on top on the parchment paper neatly. (Remember: This is going to be the top of the cake)
Sprinkle the spices and lime juice on top of the apple slices
Sprinkle the brown sugar all over the apple slices
II. Cake Batter
In a mixing bowl, add the flour, sugar, baking powder, baking soda, pinch of salt and cinnamon powder (optional) and give a good mix
Add the oil & water (or milk or buttermilk)
Mix well but do not over mix. Mix until smooth mixture
Add vanilla and mix well.
III. Final Step
Pour the batter on top of the apple slices
Bake in preheated oven at 170C/340F for 45-55 minutes or until the cake is cooked. (to check for doneness, insert toothpick in the center of the cake. If it comes out clean without leaving wet batter, it is done). Let it cool for 5 minutes in the pan and then loosen edges with a knife.
Slice & serve the Apple upside down cake warm

Ingredients
I. Fruit Layer
- 1 Apple (medium sized)
- 1/2 teaspoon Cinnamon powder (optional)
- 1/2 teaspoon Cardamom powder (optional)
- 1/2 teaspoon Nutmeg powder (optional)
- 1 teaspoon Lime Juice
- 3 Tablespoons Brown Sugar
II. Cake Batter
- 1 cup (225 grams) All Purpose Flour
- 1/3 cup (70 grams) Sugar (powdered / confectioner)
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 cup (50 mls) Vegetable Oil (or melted butter)
- 3/4 cup (200 mls) Water (or Buttermilk or Milk)
- a pinch of salt
- 1 teaspoon Vanilla Extract
Equipment used
- 8 or 9 inch round Cake pan
