Biryana Masala (Instant Biryani Spice Mix)
It’s a blend of whole spices lightly roasted and powdered. Used specifically for biryani’s, the masala powder adds not only flavour but the faint aroma that’s required in a perfect biryani. The blend is similar to garam masala, but has even more spice flavors to it.
Here’s the recipe –
- 10 Cardamoms
- 3 inch stick of Cinnamon
- 1 small Nutmeg
- 10-12 Cloves
- 2 Bay Leaves
- 1 1/2 tsp Fennel Seeds
- 6-8 Black peppercorns
- 1 1/2 TBsp Caraway seeds (shahjeera)
- 5-8 Mace
- 2 small Star anise
- Dry roast each spice separately on a moderately medium flame till the spice gives faint aroma- cardamom, cinnamon, nutmeg , cloves, bay leaf, fennel seeds, peppercorn (6 to 8), shahjeera/caraway seeds, mace, star-anise.
- Cool and powder.
- Store in a air tight container and use as required.
