Description

Eggless chocolate chip cookie dough baked with brownie batter. 2 very different textures into one treat!

Ingredients

For the brownie batter

  • 1/3 cup chopped Baking Chocolate / Chocolate Chips
  • 3 Tablespoons of melted Butter (preferably unsalted) or Oil
  • 2 Tablespoons cup plain Yogurt / sour cream
  • 1/2 cup All purpose flour
  • 2 Tablespoons Cocoa powder
  • 1/2 teaspoon Baking Soda
  • a pinch of salt (skip if using salted butter)
  • 1/2 teaspoon Vanilla extract or Instant coffee powder

For the cookie dough

  • 1/5 cup Butter, softened at room temperature
  • 1/4 cup Sugar (granulated sugar gives a crunchy texture. Any sugar can be used) {adjust according to taste}
  • 1/5 cup Sweetened Condensed Milk or plain yogurt (skip for crunchier cookies)
  • 3/4 cup All Purpose Flour
  • 1/2 teaspoon Baking Soda
  • a pinch of Salt
  • 1/2 cup Chocolate Chips

Instructions

Preparing the pan

  1. Take a sqaure 8 inch pan. Grease well with oil or butter or cooking spray.
  2. Take parchment papers with at least 1 opposites having parchment come out of the pan height. (This lets you pull out the brownies easily)

Making the brownie batter

  1. Melt chocolate and butter (or oil) together in microwave or using double boiler method. Mix well and let the chocolate liquid cool a bit. Keep stirring to avoid hardening of chocolate.
  2. Add yogurt / sour cream and vanilla (or coffee powder) and mix well.
  3. Sift all purpose flour, baking soda, salt and mix well to make a smooth batter. Don’t mix too much else you’l end up with a bread like texture.
  4. Set aside until further use.

Making cookie dough

  1. To a mixing bowl, add the softened butter & sugar. Beat it well to get a creamy buttery mixture.
  2. Add the sweetened condensed milk or yogurt to the creamed butter and sugar and mix well.
  3. Sift in flour, baking powder and a pinch of salt. Mix well. (Don’t over mix. Just enough for everything to be smooth) You’ll have an extremely soft dough
  4. Add Chocolate Chips to the dough. Fold the chocolate chips into the dough to make sure they are evenly distributed.

Putting together the perfect dish

  1. Add the cookie dough to the bottom of the pan. Spread it to an even layer all over the pan.
  2. Chop and add some chocolates (optional)
  3. Add the brownie batter and spread it also evenly
  4. Bake at 160 C / 325 F for 30-35 minutes or until the brownies are fully cooked through
  5. Let the dish cool a bit. Pull out the brownies from the pan and let it cool completely
  6. Slice into equal sized pieces and serve

Storing – put them in air tight boxes and let them stay in room temperature for 2 days or in refrigerator for a week.
