Inspired from a traditional Christmas fruit cake, but a shortcut recipe.

I’ve got a super simple Christmas Fruit Cake recipe for y’all today. Now, I know what you’re thinking – she always claims her recipes are simple

And you know what, to an extent – it is true. I don’t really attempt too many difficult recipes because I don’t have the time or patience for them. There are exceptions of course. But during a busy Holiday like Christmas, you don’t want to spend all your time cooking, do you?

Which is why you must try this shortcut recipe. It still has all the elements of a traditional Christmas Fruit Cake – but it gets ready in less than an hour.

To a microwave safe bowl, add butter, water and sugar. Heat for 30 seconds or until the sugar is melted.

Add the dry fruits & nuts and microwave for another 30 seconds. Let it cool a bit

Add oil, yogurt / sour cream, Rum / Orange juice and mix well

Sift in all purpose flour, baking powder, baking soda & salt.

Mix until you have a smooth batter (Do not over mix or you’ll end up with a bread like texture)

Pour into prepared baking pan.

Bake at 160C for 20-25 minutes or until he cake is completely cooked through.

Let it cool for 5 minutes in the baking pan. Unmold and let it cool completely.

Slice & Serve.

Ingredients

  • 1/3 cup Brown Sugar (or powdered sugar)
  • 2 tablespoons Butter
  • 2 tablespoons Water
  • 23 tablespoons chopped dried candied fruits (Raisins, Dates, Prunes etc.)
  • 2 tablespoons chopped Nuts (cashew / almond / walnut etc.)
  • 4 tablespoons Rum / Orange Juice / Cherry juice (plus some more to brush the cake)
  • Zest of 1 Orange
  • 3 tablespoons sour cream / plain yogurt
  • 1 cup All purpose flour
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Baking Powder
  • a pinch of salt (*skip if using salted butter)

Instructions

  1. Preheat oven to 160C. Grease and line a baking pan.
  2. To a microwave safe bowl, add butter, water and sugar. Heat for 30 seconds or until the sugar is melted.
  3. Add the dry fruits & nuts and microwave for another 30 seconds. Let it cool a bit. Mix in the orange zest
  4. Add oil, yogurt / sour cream, Rum / Orange juice and mix well
  5. Sift in all purpose flour, baking powder, baking soda & salt.
  6. Mix until you have a smooth batter (Do not over mix or you’ll end up with a bread like texture)
  7. Pour into prepared baking pan. Bake at 160C for 20-25 minutes or until he cake is completely cooked through.
  8. Let it cool for 5 minutes in the baking pan. Unmold and brush more rum / orange juice all over the cake.
  9. Let it cool completely. Slice & Serve.
