I know you love a good slice of Chocolate Cake.

I also know you wouldn’t object to a healthy sprinkling of Chocolate Chips.

I certainly hope you like Coffee. Or at least mild coffee infused desserts.

Because there is a whole lotta coffee + chocolate happening here today! Heard of a Mocha Chocolate Cake? Well, that’s what this is. But I’m calling it Coffee Chocolate Cake. 😉Coffee Chocolate Cake Recipe | Eggless Mocha Chocolate Cake

Ever since the secret that I bake a lot & have a website came out, I’ve been bombarded with demands from people I barely even know to bake a cake / cookie / any treat for them. (I realize I’m sounding like a pompous a*s, but it’s true!)

Don’t get me wrong, I’d love to (and am going to) bake for everybody. But I figured, if I’m really going to bake for the entire neighborhood, why not start with the people I love and care about? 😉

Remember my music teacher, Usha Aunty? The generous lady who gave me a bunch of saffron? Well, I made this for her and her son (who also clicked these amazing photos as I couldn’t figure out the functions on my new camera!)

Anyways, they loved it and so did I. If there’s one thing that can make me like Coffee, it is mild coffee infused in a Chocolate overdose.

I don’t like or drink Coffee. Neither do I like desserts that have too strong a coffee flavor.

But this one is just perfect. Subtle flavors to know that yes, Coffee is present but is not going to be the boss of the entire Coffee Chocolate Cake.

You’ll need –

Preheat the oven to 180 C. Grease and line your cake pan. I decided to bake it in a bundt pan.

In a mixing bowl, add warm water, sugar, oil, vinegar, brewed coffee and vanilla.

Mix well until sugar dissolves.

In a bowl, lightly mix flour, cocoa, baking soda and salt.

Add the flour mixture to the wet mixture. (Ideally, you should sift the flour. But I’m lazy and I don’t think it makes that big a difference! :D)

Gently mix in the flour to make sure it is well combined with the wet mixture and there are no lumps. (Don’t overmix or you could end up with a bread like texture)

In the cake pan, add about half of the batter.

Sprinkle chocolate chips and chopped nuts all over (optional)

Pour the remaining batter on top of the chocolate chips & nuts. Use a spatula to even everything out. Tap the cake pan a few times on a flat surface to make sure the batter is in even layer.

Bake at 180 C for 30-35 minutes or until the cake is cooked through.

Let it cool for 5 minutes. Loosen the edges and invert on a serving plate.

You can drizzle some chocolate sauce on top and decorate with edible beads or just slice and have as is.

Quick tip: The cake has to be stored in the fridge and stays good for at least 3 days. But the best way to have it is to slice a piece and slightly warm it up in the microwave!

Ingredients

  • 3/4 cup All Purpose Flour (Maida)
  • 1.5 Tablespoons Cocoa Powder (more for darker chocolate)
  • 1/2 teaspoon Baking Soda
  • a pinch of Salt (optional)
  • 1/2 cup Sugar (preferably powdered sugar) {adjust according to sweetness required}
  • 1/8 cup Vegetable Oil
  • 1/2 cup Warm Water
  • 1/2 Tablespoon Vinegar
  • 2 teaspoons Brewed Coffee * (see note 1 below)
  • 1 drop of Vanilla essence (optional)
  • 1/4 cup Chocolate Chips (optional)
  • 23 Tablespoons chopped Nuts (cashews, almonds etc) (optional)

Note

  • If you don’t have or know how to brew coffee use 1/2 teaspoon of Instant espresso powder. (more for a stronger taste)
  • 1 cup is around 200 grams / 200 ml.

Notes

  1. If you don’t have or know how to brew coffee, use instant espresso powder and mix it while mixing the sugar with other wet ingredients.
  2. If you’re using Convection oven, you may want ti reduce the temperature to 160 C and bake for 40-45 minutes to prevent a crust from forming
  3. Quick tip: The cake has to be stored in the fridge and stays good for at least 3 days. But the best way to have it is to slice a piece and slightly warm it up in the microwave

    Can you give me a recipe for christmas plum cake in microwave and also a
    non alcoholic version!!!
    I would love to make one on christmas!!

    1. Hi Kanika,

      Unfortunately, I don’t think a plum cake in MW would be the best idea. Dont think the texture would be the best.. Microwave cakes are good as long as you serve them immediately.
      I think I may have a good Christmas steamed fruit cake that you can make in a cooker. Would that be okay?

    Really simple and amazing stuff!:) Could u do me a favour and plz tell me the brand of the vanilla essence you use? And the chocolate chips too??

    1. Hey Zehra, thanks so much! 🙂
      I don’t know where you live, but try to find a good quality vanilla extract. I live in Mumbai and haven’t been able to find very good quality. But I use “Flavorama” brand for all my essences. They’re fine too.

      As for chocolate chips, there really is no brand in India. You just find them in these special baking supplies stores or some general stores in plastic boxes. If you can’t find chocolate chips, take chocolate slabs and (patiently) cut into small chocolate chunks! 🙂
