I bring you a simple, elegant and decadent tea-time treat today. I call this my easy chocolate s’mores cake loaf.

Why? Well, because it is a cake that incorporates all elements of s’mores – marshmallow, chocolate, nuts and graham crackers. So it was only obvious that I would call this a s’mores cake.

A simple eggless cake batter spruced up with delicious pieces of s’mores makes for an interesting cake texture. You can of course drizzle extra chocolate or frosting on top of the cake or have it with a scoop of ice cream. I prefer having a slice of this simple cake with my tea, while chilling with my neighbor’s friendly dog! Description

Simple chocolate s’mores cake loaf made with chocolate, nuts ad marshmallows


Scale

Ingredients

  • 1/4 cup Butter
  • 1/3 cup Milk
  • 1 teaspoon Vanilla Extract
  • 4 Tablespoons Vegetable Oil
  • 1 Tablespoon Milk Powder or Cornstarch
  • 3 Tablespoons
  • 1/2 cup Powdered Sugar (adjust for sweetness)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 and 1/4 cup All Purpose Flour
  • 1/4 cup unsweetened Cocoa Powder
  • a pinch of Salt
  • 1/4 cup Chocolate chips or chopped Chocolate pieces – small pieces
  • 1/4 cup chopped Nuts (almonds, walnuts, cashew, pistachio)
  • 1/4 cup chopped Marshmallow
  • 1/4 cup crushed graham crackers or similar crackers / biscuits

Instructions

  1. Preheat oven at 160 C. (150 or 140 C for convection microwave). Grease and line a cake loaf pan.
  2. Melt together butter and sugar on gentle heat.
  3. Add the vanilla extract and vegetable oil and mix well.
  4. Add the milk powder / cornstarch, yogurt, sugar and beat into a smooth mixture.
  5. Sift in the flour, cocoa, salt, baking powder and baking soda. Mix gently to form a smooth, lump-free batter.
  6. Add the chocolate, nuts, marshmallows and crushed graham crackers. Fold them into the batter to distribute evenly.
  7. Pour the entire batter into the cake tin. Tap to avoid air bubbles and get an even layer.
  8. Bake at 160 C for 30 – 35 minutes or until the cake is fully cooked through. To check, stick a fork or toothpick into the center. If it comes out clean without leaving wet batter, it is done.
  9. Let it cool in the loaf pan. Gently remove the loaf.
  10. Slice into even pieces and serve as is or with tea.
  11. Store at room temperature for 2 days or in the fridge for 7 days. Warm slightly before consuming.

Speaking of delicious this S’mores cake, the first time I had S’mores was on a trip to Bali – that I paid for myself (as a student!). I loved the delicious, ooeey, goeey desseert, just as much as I loved being on the solo trip in a foreign country. I paid for it using my credit card. You might wonder – “how did a 23-year old student manage debt”, and I’m here to bust some myths on credit card debt! Firstly, it is entirely possible to use credit cards regularly and stay out of debt forever. How you ask? Well, it is simple, really! By only charging what you can afford to pay at the time when the bill arrives. Sometimes funding a purchase with a credit card is realistic and justified as long as the repayment time frame is short. Paying for something with interest is always better in the short-term than long.

We all know it is important to maintain a good credit score. To maintain a high score, your account balance should always be under 30% of your available credit limit. Timely payments are also important. If you skip or miss a billing cycle, your creditor will report the default to unions, which can terribly impact your score. And so, it is important to keep making timely payments towards your credit card debt.

Another way to work towards your credit card debt is to request your creditors if they could give you a lower percentage. This may not work all the time, but it is worth a shot. You should also prioritize repayment of those debts with the highest interest rate first. This way, your period interest payments are reduced thus reducing your overall debt.

I personally spend around $1000 (INR 65000) for a 10-day trip to Bali, that I paid for completely with my credit card. At the time, I was an intern, earning less than $300 a month. And yet, with careful planning, I was able to pay off my debt within 6 months.
