Description

Make delicious Eggless Mango Mousse using fresh mangoes! Best treat to make when mangoes are available and in season!

Ingredients

  • 1 Fresh, Ripe Mango (*Refer Note 1)
  • 1 Tablespoon Agar Agar flakes / Gelatin
  • 1/4 cup Water
  • 1 Tablespoon Cornstarch
  • 1 and 1/4 cup Milk (preferably full fat whole milk)
  • 1/4 cup Tablespoons of Sugar (adjust to taste)
  • 1 cup sweetened Whipped Cream (*Note 2)

Notes

  • If Mangoes are not in season, you can use frozen mango puree too.
  • Use 1/2 cup of cold heavy whipping cream and 1/4 cup powdered sugar and whip together to form stiff peaks. Or use readily available whipped cream

Instructions

  1. Cut the pulp out of the mango and blend it to a smooth puree. Set aside.
  2. Add agar agar / gelatin to water and let it boil for a minute or 2 until it dissolves.
  3. Also mix cornstarch (cornflour) with 1/4 cup of Milk and set aside.
  4. Add sugar to milk and bring it to a boil. Keep stirring to avoid sugar or milk burning. Once the sugar dissolves, reduce the heat to medium low and let it boil for 5-6 minutes. This helps make the mousse texture a lot creamier. Taste and adjust for sweetness at this stage.
  5. Add the cornstarch-milk mixture to the milk and keep stirring continuously. Cook on low heat till you get a thick custard like consistency.
  6. Add the agar-agar / gelatin mixture and mix well. Switch off the flame and continue stirring as it cools completely. This ensures that there is no skin that forms on the surface of the mixture.
  7. Add the mango puree to the pudding-like mixture and mix well.
  8. Once the mixture is cool, add whipped cream and fold it in until it is fully mixed.
  9. To a serving glass, add some mango puree to the bottom and fill it with mango mousse and top it off with more mango puree. Close with a lid / foil and refrigerate for a few hours or until it is set completely.
  10. Serve with a slice of mango on top.

  1. This stays well in the refrigerator for up to a week.
