Funfetti Cupcakes
Colorful Mini Funfetti Cupcakes to brighten up your day!
I don’t know why, but I’m suddenly obsessed with making mini versions of everything. I find that mini cupcakes or mini cakes or mini scones are just the way to maintain portion control whilst ensuring that more people get to have a taste of the treat. Wouldn’t you agree with me?
Take these Funfetti Cupcakes for example. If I were to make the same as regular sized cupcakes, I’d probably get about 4-6 of them. And I think they would lose their “cuteness”. But this way, not only do I get about 25 cute mini cupcakes, I also fed them to an army (of neighborhood kids)!
Mini Funfetti Cupcakes Recipe
In a mixing bowl, beta the sugar and yogurt together.
Add baking powder & baking soda. Mix well and set aside for 5 minutes until you se a lot of air bubbles.
Add oil, vanilla extract and mix well.
Add the custard powder and mix well (I added this for the beautiful yellow color the custard powder gives and to add an extra punch of vanilla flavor. You can skip this step if you want)
Add the flour and salt. Mix until you have a smooth batter. (Do not overmix or you’ll end up with bread like consistency)
Add in the Funfetti (or Sprinkles). Fold it into the batter. (The sprinkles / funfetti start to melt a bit and give you a colorful batter)
Pour into prepared cupcake molds.
Bake at 150C for 18-20 minutes or until the cupcakes are fully cooked through. Let them cool completely.
Meanwhile, you can make the glaze. Mix powdered sugar with milk and beat to form a thick glaze (optional)
Lightly glaze all the cupcakes and top with some more sprinkles / funfetti. Let them cool completely and serve!

Ingredients
- 1/3 cup plain Yogurt (or sour cream / curd)
- 1/2 cup Powdered Sugar
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Baking Soda
- 1/4 cup Vegetable Oil
- 1 teaspoon Vanilla Extract
- 2 Tablespoons vanilla Custard Powder (*Note 1 below)
- 1 cup All Purpose Flour
- a pinch of Salt
- 1/4 cup Sprinkles / Funfetii (or more)
For the glaze
- 4 tablespoons powdered sugar
- 1–2 teaspoons Milk (or more)
Note
- Custard powder just gives the cupcakes a yellow color. You can skip it if you want.
- Making the glaze is optional
Instructions
