Italian Lemon Ice Granita

How can something so mind-numbingly easy be this delicious?!
How delicious? Well, Lemon Ice Granita kicks my Oreo Brownies‘ a*s! Honest truth.
The icy comfort I find in this Lemon Ice Granita – especially after a hot summer day is heaven to me! Believe me when I say no refreshment beats its tangy, revitalizing, citrus-y taste. And if you’re a Lemonade / Lemon Juice fan, it’ll be hard for you to hate this dessert!
I found many recipes that called for ‘Ice cream machines’. I don’t have one and hence, I tried out an idea I had in mind and was pleasantly surprised to find a texture that I really loved.
I could go ga-ga over this dessert all over again. But I wouldn’t want to waste your time! 😉 So here are the VERY FEW ingredients you’ll need to make this amazing dessert –
LEMON ICE GRANITA – The Method
Place a shallow baking dish (like 9X13) in the freezer for a couple hours. You want that nice & cold.
In a small saucepan, add the water & sugar. Place it on medium heat and bring it to a gentle boil.
Cook long enough till the sugar has melted. (Don’t keep longer than that or it’ll start to turn into caramel!)
In a large bowl with the ice cubes, pour the hot sugar syrup.
Stir occasionally until the ice cubes have almost melted. (I wasn’t very patient. It’ll take at least 5-10 minutes)
Add the lemon juice & lemon zest
Mix well.
Remove the baking dish that you had kept in the freezer.
Pour this lemon ice mixture into the dish.
Freeze for 1 hour. Then with a fork, mix up the mixture to break up any pieces that have frozen.
Pop it back in the freezer and every 45 minutes, mix it with a fork to make sure the mixture doesn’t freeze in one big block.
Repeat the fork method every 45 minutes for 4 hours.
After 4 hours, you’ll have a crushed ice mixture
Serve the Lemon ice immediately.

Ingredients
- 1 cup of Granulated Sugar
- 1 cup of Water
- 1 cup of Freshly Squeezed Lemon Juice
- Zest of One Lemon (grate the yellow part of the skin)
- 5 cups of Ice Cubes
