I have a new favorite butter substitute.

Almond Butter is the magic word, people.

Remember how I shared this homemade almond butter recipe a while ago? I promised to come up with sweet and savory recipes with this healthy ingredient. Well – here I am with the first of many dishes I’ve got in store for you! Almond Butter Cake with a swirl of Jam in it. Tasty, simple and so much healthier!

Jam Swirl Almond Butter Cake Recipe | Eggless Almond CakeNow, I’m going to be honest with you. I don’t know if all of you will like recipes with Almond Butter right away. It is after all not something you are used to. But trust me, all it takes is a delicious cake like this for the nuttier butter taste to grow on you. Before you know it, you’ll be making healthier choices! Just wanted to put the disclaimer out there. 😉

Also, you are free to use Wholewheat flour instead of All purpose flour in this recipe. I’m not a fan of the wholewheat flour taste in sweet dishes so I don’t use it very often. And I think if I am going to be eating healthy, why not make one tiny change at time?! 😀

JAM SWIRL ALMOND BUTTER CAKE RECIPE

If you are making fresh almond butter, use that. But if you have stored the butter in the fridge, chances are it might be thick and not easy to beat. In that case, microwave it for 20 seconds to get it soft & at room temperature.
Add sugar to the almond butter and mix well. It won’t be creamy like regular butter just yet. But be patient! 🙂

Add milk / soymilk / water, vanilla extract and mix for a smooth mixture.

Add the flour, salt, baking powder, baking soda and mix until dry is mixed into the wet and forms a smooth batter. Do not over mix or you’ll end up with a bread like texture

Add the batter to the prepared baking pan

Add spoonful of jam in different places on the batter. With a knife, swirl it in and around the batter. You can make it as pretty as you want! 🙂

Bake at 160C for 30 minutes or until the cake is done. Let the cake cool in the pan for 5 minutes. Loosen the edges, invert onto the serving plate and let it cool completely

Once it is cool, you can slice and serve.

Ingredients

  • 1/3 cup Almond Butter
  • 1/2 cup Sugar (Raw / Refined / Brown)
  • 1/4 cup Milk / Soymilk / Water (plus a little more if required)
  • 1 teaspoon Vanilla Extract
  • 1 cup All Purpose Flour
  • a pinch of Salt
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Baking Powder

Optionally – Jam of your choice

Note

  • If you are making fresh almond butter, use that. But if you have stored the butter in the fridge, chances are it might be thick and not easy to mix with sugar. In that case, microwave it for 20 seconds to get it soft & at room temperature.
  • If the jam is refrigerated, add a drop of water, mix & microwave to loosen it up a bit
  • You can skip jam and make a plain Almond Butter Cake as well

Instructions

  1. Add sugar to the almond butter and mix well. It won’t be creamy like regular butter. Just mix till sugar is dissolved.
  2. Add milk / soymilk / water, vanilla extract and mix for a smooth mixture
  3. Sift in the flour, salt, baking powder, baking soda and mix until dry is mixed into the wet and forms a smooth batter. Do not over mix or you’ll end up with a bread like texture. Add the batter to the prepared baking pan
  4. Add spoonful of jam in different places on the batter. With a knife, swirl it in and around the batter. You can make the swirl randomly or in a design you like
  5. Bake at 160C (325F) for 30 minutes or until the cake is done. Let the cake cool in the pan for 5 minutes. Loosen the edges, invert onto the serving plate and let it cool completely.
  6. Once it is cool, you can slice and serve.

Note

  1. If using convection oven, bake at 150C (300 F). Also cover the baking pan with aluminum foil to avoid burning / cracking of cake top
  2. Adjust sweetness according to your taste
  3. You can substitute wholewheat flour instead of regular all purpose flour for healthier cake. But the taste will change. Unless you like the earthier flavor of wheat flour, do not use it
  4. To store, cut into slices, store in air tight container at room temperature upto 3 days & in the fridge upto 7 days. (If refrigerated, warm up for 10 seconds before serving)
  5. You can substitute peanut butter for almond butter too

You can make your own Almond Butter using my recipe or buy a jar… You can also use Peanut Butter instead of Almond Butter in this recipe.
