Jollof Rice is a dish from Western Africa; typically made with long grained rice cooked in a tomato base and optionally, vegetables and protein! It is usually cooked in a single pot, and there are as many variations of the recipe as there are grains in the dish!

I love one-pot meal recipes, for it lets me put together meals with fewer dishes to clean after. Jollof, much like the Indian Vegetable Pulao, is a popular rice dish that is a common party dish all across West Africa. The simplicity of putting this together in large batches makes this a popular potluck/party dish.

I came across many recipes for the Jollof Rice, and came to the conclusion that like any other pilaf, this recipe could be tweaked to one’s preferences. I for one, decided to make a jollof with veggies. But you can certainly use any protein source (meat or vegan) you prefer. To make this dish more wholesome, I recommend topping off with grilled tofu or other protein. Scotch bonnet pepper is usually featured in many recipes, but again, use what you have. I love the red color of the rice, rendered by using tomato paste. You could skip it, but then the color and flavors of the jollof wouldn’t be as intense.

Ultimately, a jollof is what you make of it. Follow simple steps of soaking the long grained rice, using tomato paste & seasonings, and cook it the way you like. And when you do make a batch and share with you acquaintances, make sure to credit the West African, typically Nigerian cuisine for this quick, easy & delicious recipe! 🙂

  • 1 Tbsp Vegetable Oil
  • 1 tsp Ginger & Garlic each, minced
  • 1 small Onion, finely chopped
  • 1 cup mixed Veggies, finely chopped 
  • 1/2 tsp Salt (adjust to taste)
  • 1 Tbsp Tomato paste
  • 1 tsp dried Rosemary
  • 1 tsp dried Thyme
  • 1 tsp Hot pepper flakes (or scotch bonnet pepper)
  • 1 tsp Vegetable Boullion Cube or paste or curry powder
  • 1/2 cup Long-grained Basmati Rice
  • 1 cup Water (adjust depending on type of rice)
  • Optional – Parsley or Cilantro leaves for garnish
  • Optional topping: Grilled Tofu or any protein of choice


  • Wash long grained rice & soak in water for 30 minutes
  • In a pan, heat oil and add ginger, garlic & onions. Saute until golden
  • Then add mixed veggies and saute few minutes
  • Add the tomato paste, boullion cube, salt, rosemary, thyme, hot pepper & mix well
  • Add the rice, water & mix well. Adjust seasoning if required
  • Cover with a lid, reduce to medium low heat
  • Cook for 15-20 minutes or until rice is well cooked
  • Fluff up with a fork, garnish with herbs if you want
  • Optionally, top off with grilled tofu or any protein of choice
  • Serve warm!
