You can make this gluten-free Jowar Pizza with a few ingredients in under 15 minutes! A healthy, low-fat recipe using Sorghum flour (Indian jowar atta).

Jowar pizza is a recent favorite addition to our list of gluten-free recipes! Made with the Indian jowar atta or sorghum flour, the crust is easy to put together, healthier and leaves you feeling lighter and more satiated! And if you’re craving a pizza more often than you’d like, maybe it’s a good idea to switch things up, ditch the yeasty pizza crust for this version!

Globally known as the “new quinoa”, jowar aka sorghum, a member of the millet family, is known for its whole-grain goodness. And as much good rep as Sorghum is getting these days, Jowar is a staple ingredient in many Indian cuisines, dating back centuries. Its high fiber content makes it a gut-friendly ingredient, that leaves you feeling full quickly. Its also known to have a rich protein and iron content, and has a lower glycemic index, making it a great carb option.

How to make Jowar Pizza?

With all these health benefits, choosing Jowar as the main ingredient for a pizza crust was a no-brainer! You’ll have to keep a few things you need to keep in mind while making the jowar pizza:

  • Since its a gluten-free flour, its not going to rise or have the same fluffy texture that a refined or whole-wheat flour has. So when you’re looking to make this pizza crust, you shouldn’t go in expecting the traditional crust. Its going to feel more like a flatbread than a bread
  • Adding baking powder is really optional – there’s a negligible difference in the final output. But it does make a small difference, making the flatbread crust slightly spongy
  • A Jowar pizza crust should be consumed hot. Make just enough to consume fresh!
  • The jowar flour dough is brittle & might break when you’re forming the crust. But its also forgiving! So just use wet palms to stick it back together & form the disk
  • If you know how to make the Jwarichi Bhakri or Jowar Roti, you can simply use that as a crust!

Description

Ingredients

For the Crust:

  • 1/2 cup Jowar Flour
  • 1/4 tsp Salt
  • a pinch baking powder (optional)
  • 1 Tbsp Veg Oil
  • 1/4 cup Warm Water (adjust as needed)

For the Pizza:

  • Cheese
  • Pickles
  • Veggies & Protein of choice
  • Hot Pepper Flakes & Pizza Seasoning
  • Fresh basil or parsley for garnish

Other equipment needed:

  • Flat griddle with a lid, preferably oven-proof
  • Broiler if possible

Instructions

To make the crust:

  • Mix the dry ingredients together
  • Add the oil, warm water & mix to bring the ingredients together
  • Knead for 6-7 minutes or until its a smooth dough
  • Place the dough on the pan (off heat). Using a wet palm, flatten it and spread it to a round disk
  • Prick the crust with a fork all over
  • Brush the top with some oil
  • Cover with a lid, cook on medium low heat for 6-7 minutes
  • Flip the pizza, reduce the heat to low
  • Then go ahead with the toppings.

Toppings:

  • Add some sauce & spread on the base
  • Add your choice of veggies, protein, pickles, cheese
  • Cover with a lid
  • Reduce to medium low & cook for 8-10 minutes or until the cheese melts & the crust becomes crisp
  • If you have a broiler / oven, bake at 400 F for 1-2 minutes
  • Finish off with a garnish of pizza seasoning, hot pepper flakes, fresh basil or parsley
  • Cut into slices with a scissor (easier) & serve hot!

Notes

Tips to making the Gluten-free Jowar / Sorghum-flour crust:
🍕I’ve tried with baking powder & without, and frankly, the difference is negligible. If you want a slightly puffier crust, go for it!
🍕 knead the dough for 8-10 minutes until it’s smooth. This prevents it from breaking too much when you’re forming the crust
🍕 it’s a very forgiving dough. Just use some wet hands to stick broken pieces together, and spread it on a pan
🍕 you can flour a surface and roll into a round disk, but an easier option is to directly shape it on a round griddle
🍕 you can cook on a pan alone, but I highly recommend broiling for a couple minutes to melt the cheese & crisp up the base
