Mocha White Chocolate Chip Cookies
An unconventional recipe for eggless Mocha White Chocolate Chip Cookies; the union of Coffee & White Chocolate is phenomenal!
Gosh Golly. Where were you all this time? No not you, white chocolate. I already know and love you so much. But you – COFFEE! You’re a sneaky little bastard, aren’t you?! You hid behind your bitter flavor, not showing us how truly delicious you can be!
All my life, I’ve hated coffee. It is bitter – even with milk or cream – and is just so not something I would drink – even on a crazy day. But an impromptu decision to dump the instant coffee powder into my cookie dough – just because it was expiring anyway – gave me a super recipe to cherish! I think the coffee flavor offset the overly sweet white chocolate to give me a perfectly balanced cookie recipe. Try it, it may be your next favorite recipe!

Mocha White Chocolate Chip Cookies

- Cook Time: 12 mins
- Total Time: 22 mins
- Yield: 12-15 cookies 1x
Ingredients
- 1/3 cup Butter, soft at room temperature
- 1/2 cup Brown Sugar (or regular sugar)
- 1/4 cup White Chocolate Chips (or cut white chocolate into small chunks)
- 2 teaspoons Instant Coffee Powder * (Note below)
- 1 cup All Purpose Flour
- 1/8 teaspoon Baking Powder
- 1/4 teaspoon Baking Soda
Note – Coffee
- Use more or less based on how intense you want the Mocha flavor to be. If you don’t have instant coffee powder, add 1-2 tablespoons of brewed coffee
Note – 1 cup = 200 grams
Instructions
- Grease and line a baking sheet with parchment paper or silicon mat. Or line the baking sheet with aluminum foil (shiny side down). Preheat oven to 200C (180 C if using convection oven)
- Mix together soft butter and sugar for 1-2 minutes till you have a creamy smooth mixture.
- Add coffee and white chocolate and mix well
- Sift in the flour, baking powder & baking soda. Mix to form a smooth dough. Do not over mix or you’ll end up with a tough cookie
- Make lemon side balls of the dough and place on the baking sheet at a distance of 1-2 inches from each other. Gently flatten out the cookies a little. Press some white chocolates on top if you want.
- Bake at 200 C for 10-12 minutes and let the cookies cool completely. Enjoy!
Note – Even if the cookies seem soft at 12th minute, take them out, Cookies usually tend to harden as they cool. So over baking them will give you really crunchy cookies
Mocha White Chocolate Chip Cookies- step by step pictorial
Start by creaming together the butter and sugar
Add the coffee powder & white chocolate chips. Mix well
Sift in the flour, salt, baking powder and baking soda. Mix well to form a soft dough
Make lemon size balls of the dough. Place on the greased baking sheet at a distance of 1-2 inches from each other. With your fingers, gently flatten them out a little and press a few white chocolate chips on top of the surface of the cookies if you wish
Bake at 200 C for 10 minutes. Let it cool completely. Enjoy!
