Mocha White Chocolate Chip Cookies

  • 1/3 cup Butter, soft at room temperature
  • 1/2 cup Brown Sugar (or regular sugar)
  • 1/4 cup White Chocolate Chips (or cut white chocolate into small chunks)
  • 2 teaspoons Instant Coffee Powder * (Note below)
  • 1 cup All Purpose Flour
  • 1/8 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda

Note – Coffee

  • Use more or less based on how intense you want the Mocha flavor to be. If you don’t have instant coffee powder, add 1-2 tablespoons of brewed coffee

Note – 1 cup = 200 grams


  1. Grease and line a baking sheet with parchment paper or silicon mat. Or line the baking sheet with aluminum foil (shiny side down). Preheat oven to 200C (180 C if using convection oven)
  2. Mix together soft butter and sugar for 1-2 minutes till you have a creamy smooth mixture.
  3. Add coffee and white chocolate and mix well
  4. Sift in the flour, baking powder & baking soda. Mix to form a smooth dough. Do not over mix or you’ll end up with a tough cookie
  5. Make lemon side balls of the dough and place on the baking sheet at a distance of 1-2 inches from each other. Gently flatten out the cookies a little. Press some white chocolates on top if you want.
  6. Bake at 200 C for 10-12 minutes and let the cookies cool completely. Enjoy!

Note – Even if the cookies seem soft at 12th minute, take them out, Cookies usually tend to harden as they cool. So over baking them will give you really crunchy cookies
