Nacho Bread Rolls

See what I did there? Mexican Awesomeness is equal to Mexicawsomeness. Fair Enough? Or is that really lame? Well, I think we’re way past the I’m-such-a-sophisticated-food-blogger phase. I think you will forgive me for inventing such silly names to describe recipes like these nacho bread rolls!
Because truly, these nacho rolls are one of the greatest appetizers ever. I say that all the time, I know. But if you’re a fan of Mexican food or you each a lot of nachos, do me a favor – try these nacho bread rolls next time you have some leftover bean / beef filling.Wrapped in pizza dough, the nachos filling renders a mild softness to the rolls. Despite being a somewhat wet mixture, the filling does no make the rolls overly soggy either. In fact, you’ll find that the flavors of the nachos filling actually intensifies as you bake the rolls!
P.S: I’m showing you how to make a vegan nachos filling with kidney beans and sweet corn. However, you can use any leftover nachos filling you have.
Nacho Bread Bites

Ingredients
For the Kidney Bean – Sweet Corn Filling
- 1 cup Cooked Kidney Beans (Canned, rinsed) (*See Note below)
- 1/2 cup boiled Sweet Corn kernals (boil till they have a soft bite)
- 1 Onion, finely chopped
- 2 Tomatoes, chopped
- 2 Garlic cloves, minced
- 2 Jalapeno Chilli, chopped (adjust according to spice required) {Or any chilli}
- 1 tablespoon Tomato ketchup / tomato paste
- 1/2 teaspoon Cumin powder
- 1/2 teaspoon Cinnamon powder
- 1/2 teaspoon ground Black Pepper
- 1 teaspoon Chilli powder / Paprika
- 1/4 teaspoon Sugar
- 1/2 cup Water / Vegetable Stock
- 1 tablespoon Salt (adjust to taste)
- 2 teaspoons Oil (vegetable oil)
Others
- 1/2 pound / 225 grams Pizza Dough (homemade or store bought)
- Mexican cheese (optional)
- Oil / Melted Butter / Egg-wash
Note – Kidney beans
- To cook kidney beans, soak 1/2 cup beans overnight in water. Add to a pressure cooker along with 1 and 1/2 cups water and a dash of salt. Cook for 8-10 whistles or until it has a soft bite to it. OR you can boil water on a pan with high sides. Add the washed kidney beans. Cover and cook until it is tender. Otherwise use canned beans
Instructions
To make the Filling
- Heat oil and add minced garlic and jalapeno. Fry for 10 seconds. Add the chopped onions. Fry till it is translucent.
- Add the tomatoes and mix well. Fry on medium heat, stirring occasionally till it has reduced to a mush.
- Add the tomato paste, sugar, spice powders and salt and water / stock. Mix well and cook for 3-4 minutes.
- Add the cooked beans and corn. Mix well. Cover and cook on low heat for 15 minutes. Open the lid and continue to cook for another 10 minutes or until you have a thick filling mixture. Taste and adjust for seasonings.
- Remove and set aside for use
To make Nacho bread bites
- Brush a baking pan well with oil and sprinkle some semolina (rava) or cornmeal all over. This prevents the rolls from sticking to the pan. Else, line the baking pan with parchment paper or aluminum foil.
- On a clean work surface, add some all purpose flour and the pizza dough.
- Using your hands or a rolling pin, stretch out the dough into a thin sheet. It doesn’t have to be perfect.
- Cut the dough into equal pieces. You’ll get around 24 pieces. But it depends on how big a piece you cut and how much dough you are using
- Pile about a Tablespoon (or how much ever you can manage) of the filling. If you want, also add a little bit of cheese on top.
- Brush the edges with a little bit of water or milk and bring all the four corners of the dough in the center. Seal the edges well and roll it into a ball. Do the same with all other pieces of dough. Lay them seam side down on a baking sheet or a baking pan.
- Cover loosely with a kitchen towel and let the rolls rise again in a warm spot for 20 minutes.
- Meanwhile, preheat the oven to 200 C / 400 F (If using convection oven, bake at 180 C)
- Brush the top of these rolls with oil or melted butter or milk or cream or egg wash.
- Bake them for 20-25 minutes at 200C or until the bites are golden brown and cooked.
- Serve hot with soup or salsa or any dipping of your choice
NOTES
- **Make sure it isn’t too thin or it’ll tear while rolling. If it’s too thick, you’ll get a lot of bread before the stuffing. Just roll upto around 1/4 of an inch.
- You can bake the rolls together in a cake pan also. In this case, the rolls will bake together & you’ll have to pull them apart and eat
Nacho Bread Bites Recipe – Step by Step Pictorial
A. Red Bean & Sweet Corn Filling
Heat Oil in a pan with high sides. Fry garlic and chilli for a few seconds. Then add the chopped onions & fry
Once onions turn translucent, add the chopped tomatoes and mix well
Once the tomatoes reduce to a mush, add a splash of water / stock. Add the seasonings and mix well
Add the cooked kidney beans & sweet corn. Mix well and let it cook on medium heat for 20 minutes. Stir occasionally.
Once the mixture is completely reduced to a somewhat thick filling, remove on a bowl and set it aside.
B. Making the Nacho Bread Bites / Nacho Rolls
Make your pizza dough before hand. Take about a tennis size ball of dough on a floured work surface.
Roll it to 1/2 inch thick a rectangle.
Cut out equal sizes of dough
Place about 2 teaspoons of filling on each piece. If you want, you can add some cheese as well.
Roll it into a ball.
Place on prepared baking sheet. Cover loosely with clean kitchen towel and let it rise on a warm spot for about 20 minutes
Brush the rolls with oil (or melted butter / egg-wash)
Bake at 200 C for 18-20 minutes. Enjoy these rustic rolls with some red lentil soup or salsa!
