First things first. I know you’re thinking “why do these rolls look funny?”

Let me answer that for ya. A little someone that she was being economical. She thought she was cooking for herself so she decided to make a small batch. But she didn’t have the right pan for placing these rolls in. And what do you know? They decided to rise horizontally rather than vertically! Who is this great person, you ask? Why, you’re looking at her!

Now that we’ve got the initial awkwardness out of the way, can we get back to business? These rolls are no joke people…! Never have I dared to experiment with yeast . Besides my tried and tested pizza dough, I’ve rarely tried my hand and creating / trying recipes that contain anything but refined flour. But of course, we all try to make healthy choices along the way, don’t we? And Oats – being the wonder cereal that it is – makes for a great binder. These oatmeal dinner rolls contain part refined flour, part oatmeal and the usual – yeast, salt etc. They are low on fat (no butter) and can easily be converted to a vegan recipe by substituting the milk / cream wash with something else.

And best of all? these dinner rolls work for any meal of the day. And they retain their fluffy texture all day long!

Take a closer look. Go on… Do you see the fluffiness?? And this fluffiness is retained all day! You could refrigerate these buns, rewarm (or better yet, steam) and you’ll have the texture back in a jiffy. I do suggest you bake them only on the day you want to eat them, so that you retain maximum flavor.

Now, lets talk about what you’re going to do with these buns, shall we?

I’ve already replaced my regular dinner rolls with these babies for almost all my meals (when I do eat rolls). My Indian favorite – Pav Bhaji is now more of a Bhaji + these oatmeal dinner rolls 😉 And trust me – toasted with a little butter, the nutty flavor of these rolls is just magnified and great.

Description

Fluffy, soft homemade oatmeal dinner rolls


Scale

Ingredients

  • 2 cups All Purpose Flour (Refined Flour)
  • 1 cup Oatmeal (refer note 1 below)
  • 1/3 teaspoon Salt (adjust for taste)
  • 1/2 teaspoon red pepper flakes / chilli powder (optional)
  • 1/2 teaspoon pizza mix / oregano / any other spice you like (optional)
  • 1 cup Lukewarm Water (plus a little more, if required)
  • 1 teaspoon Yeast (Instant or Active Dry Yeast)
  • 1/2 teaspoon Sugar
  • 2 teaspoons Oil (if required)

Additionally –

  • Egg wash or Milk or Cream for brushing on top
  • Flaxseeds, Sesame seeds etc. (optional)

Note

  • If you don’t have oatmeal flour, take 2 cups of oats, grind it in a mixer or grinder and use that

Instructions

  1. Add the refined flour, spices, salt, oatmeal and mix together.
  2. Add yeast and sugar to warm water. If it is instant yeast, it wont bubble up. If it is active dry yeast, it will bubble up in 2 minutes.
  3. Add the solution to the flour mix.
  4. Mix together and knead for 10-15 minutes until you have a smooth and elastic dough. You don’t need any oil or butter. However, if the dough is getting sticky and hard to knead, add a couple spoons of Oil and knead. {If you’re using an electric dough mixer, it should take somewhere around 8-10 minutes}.
  5. Once the dough is done, add to an oiled bowl, cover & let it rise and double up in volume for 45 minutes to 1 hour in a warm spot
  6. Grease your baking pan with oil or butter. Sprinkle some semolina or cornmeal or all purpose flour all over the pan to prevent the rolls from sticking to the pan
  7. Divide the dough into equal portions. Roll each portion into a smooth ball and place on a greased baking pan.
  8. Meanwhile, preheat oven to 180 C (160 C if it is a convection oven)
  9. Once they have risen, brush them with egg wash or milk or cream (or your vegan substitute for egg wash. Sprinkle some flax seeds and sesame seeds on top
  10. Bake in a preheated oven for 25-30 minutes or until the rolls are fully cooked through. Serve warm with any condiment / side of your choice. Enjoy!

Note

  1. It is best to place rolls at a distance of not more than 1 inch from each other. Otherwise, they will simply rise horizontally than upwards
