I’m writing this post sitting in a hotel room about 2000 kilometers (1200 miles) away from home. I just realized what a bad timing it is to be writing about a delicacy like Paneer Kebabs from a place where you not only DON’T get Paneer, but people don’t know what the heck grilling is!

Nevertheless, I only have fond memories of the day I decided to marinade a bunch of veggie chunks and soft Paneer cubes and grill them in the oven! This is a wonderful appetizer that you could serve to your guests and have them rave about all the faux “hard-work” you did! 😉 Only you and I would know how ridiculously easy this Paneer Kebab really is.

Grind the chilli, ginger, garlic and mint together. Mix yogurt with mint paste and the spices well.

Add the large chunks of paneer and veggies and mix well. Make sure the yogurt coats the veggies as well as paneer well.

Cover and refrigerate for a minimum of 1 hour (The longer you marinade, the better the taste will be! You can do this a day ahead and just grill on the day of a party! 😉 )

Take skewers and carefully piece it through the center of the paneer and veggies. I did the first layer as capsicum then onion then paneer then tomato and repeat. You can choose to do it any way you want

Place the skewers on a wire rack / grill pan (Preferably, place a baking sheet underneath the rack to catch any spices to avoid messing your oven. Grill in the oven / convection oven / grill pan / broiler on each side for 5-6 minutes. (If your oven has a temperature for grilling keep it somewhere in medium high heat)

Ingredients

  • 250 grams (9 ounces) of fresh Paneer
  • 1 large Tomato
  • 1 large Capsicum (Bell Pepper)
  • 1 large Onion
  • 2 cloves Garlic
  • 1 teaspoon grated Ginger
  • 2 Green Chillies
  • 1/4 cup mint leaves (optional)
  • 1/3 cup cold Curd / Plain Yogurt
  • 1/2 teaspoon Turmeric (Haldi) Powder
  • 1 teaspoon Red Chilli Powder (optional)
  • 1 teaspoon Garam Masala Powder (homemade or store bought)
  • 1/2 teaspoon Coriander seeds Powder (dhania)
  • 1/2 teaspoon Black Salt (optional)
  • 1 and 1/2 teaspoons Salt (adjust to your taste)
  • a pinch of Sugar

Equipment

  • Grill pan / oven / broiler / convection oven
  • Skewers (preferably wooden)

Note

  • Homemade paneer won’t work so well for this recipe. Go to an Indian store or a special Paneer or Cottage Cheese (or any firm cheese) selling shop to get fresh cheese
  • The spices’ measures given here are what suit our palate. You may have to increase or decrease one or all of them to your liking.

Instructions

Prepare the Paneer and veggies

  1. It is crucial to cut out large chunks of the veggies and paneer to properly stay in the skewer as well as get a larger surface area for grilling. If you cut small pieces, they might fall off the skewer. Accordingly, cut the Paneer into 10-12 large cubes, tomato into 4-6 cubes, capsicum into 4-8 chunks and onion int 6-8 chunks. There really is no “rule”. Just make sure all are of the same size and at least 1 inch big.

Other Steps

  1. Grind the chilli, ginger, garlic and mint together. If you don’t want/have mint, skip.
  2. Mix yogurt with the paste prepared and all the spices as well.
  3. Add the large chunks of paneer and veggies and mix well. Make sure the yogurt coats the veggies and paneer well.
  4. Cover and refrigerate for a minimum of 1 hour (The longer you marinade, the better the taste will be! You can do this a day ahead too)
  5. Take skewers and carefully piece it through the center of the paneer and veggies. If the veggies / paneer are falling apart, work slowly by screwing in the skewer instead of just piercing. Start off with onion or bell pepper and alternatively pierce each of the veggie or paneer.. You can do as per your preference
  6. Place the skewers on a wire rack / grill pan (Preferably, place a baking sheet underneath the rack to catch any spices to avoid messing your oven. Grill in the oven / convection oven / grill pan / broiler on each side for 5-6 minutes. (If your oven has a temperature for grilling keep it somewhere in medium high heat)
  7. Serve hot with mint chutney

I suggest you use Bamboo or Wooden Skewers for this recipe. They’re easy to use and can be disposed off as well!
