Spaghetti with Bean Balls

I love having people make food for my blog! I believe it is a welcome change from my usual style! 😛 😀 Today, I’m pleased to welcome my close friend Swati over to share her Spaghetti recipe with us! Over to SWAT~~~

This is my first major attempt at cooking and blogging, so kindly excuse me if I am not as great at it as Ms. RK here. When she told me about her blog, I googled it immediately and loved what I read. Her recipes are clear, the pictures are drool-worthy and they somehow make you want to cook, if you know what I mean.
So anyway, here I am guest-blogging away to glory on Spaghetti with bean-balls. This is a vegetarian version of the quintessential Spaghetti with meat balls. It tastes really good and my brother wiped his plate clean 😉

Serves 2You will need
Kidney beans soaked and boiled- 1 cup
Vegetables like carrots, beans and capsicum- half cup each
Tomato puree
Pepper powder
Salt to taste
Corn flour
Vegetable Oil for deep frying
Red chillies
Bread crumbs
(Haven’t given the measurements coz all these depend upon your taste. Taste and adjust accordingly)

Chop all the vegetables length-wise and keep them aside. (Don’t forget to lid them!)
Simultaneously, get the spaghetti ready. I used the typical Blue Bird variety that is available in most grocery stores across India
Now in a vessel, bring water to a rolling boil, add salt to taste and a little oil and then the required amount of dry spaghetti. The oil prevents the spaghetti from sticking to each other. Let it boil for 10 minutes after which drain the spaghetti and keep aside
For the bean balls –
Boil the kidney means for a good 15-20 minutes. Make sure you do not add salt while cooking them. Salt comes later
Now mash the cooked kidney beans thoroughly. Add salt, breadcrumbs, corn flour and other seasoning make into small even shaped balls
Heat oil in a pan and shallow fry the bean-balls. A healthy variant could be to bake them; but I preferred to fry. 😀
Keep the fried bean-balls aside
For the Sauce
Heat oil in a pan. Sauté garlic till golden.
Now add the vegetables and stir fry till they change colour
Add the tomato puree and let it simmer for 4-5 minutes on a low flame
Season with salt, pepper, thyme and oregano
Your sauce is done
On a plate take the required amount of spaghetti. Put a little sauce on it, mix well and place the bean-balls in the center and serve hot. Enjoy on a chilly night after soup 🙂
