Stuffed Veggie Pizza Bites.

It’s totally a thing.

Maybe it ws called Pepperoni Pizza Bites before. Maybe it’s thing I “vegetarianized“. But still – it’s a thing I’m totally down with.

Can’t you just picture it: A group of friends gathered around a table and then a big plate of these gorgeous beauties are delivered right under your noses? All of a sudden people are knocking elbows, rushing to stuff their faces with as many of these as possible… ahhh yes, I’d definitely make these for the next party I’m gonna host! 😉

There’s really nothing about these cheesy pizza bites that isn’t wonderful. But before you make them, I need to make sure you understand one thing: PLEASE USE WHOLE MILK CHEESE! And make them spicy! Only then will it truly be a “hot party”! :D

Here’s what you need to make these –

Preheat your oven to 200C / 425F

In a mixing bowl, add all the ingredients for the stuffing except the cream cheese & mozzarella cheese. (Make sure you grate the garlic first)

Mix them well and set aside. They will release some water, but that’s okay. We’ll get rid of it during stuffing.

On a clean work surface, add some all purpose flour and the pizza dough. (You can make the dough at home or buy from the store)

Using your hands or a rolling pin, stretch out the dough into a thin sheet. (**Make sure it isn’t too thin or it’ll tear while rolling. If it’s too thick, you’ll get a lot of bread before the stuffing. Just roll upto around 1/4 of an inch.)

Cut the dough into equal pieces. I got around 16 pieces. You can cut however big or small you want the bites to be.

On each piece, add a small dollop of cream cheese

Pile about a Tablespoon (or how much ever you can manage) of the vegetable stuffing. (*While doing this make sure you use your hand to squeeze out the moisture OR use to use so that one can be use to press the moisture out of the mixture)

Add a small cube of mozzarella cheese or a piece of slice cheese.

Brush the edges with a little bit of water or milk and bring all the four corners of the dough in the center.

Seal the edges well and roll it into a ball.

Do the same with all other pieces of dough.

All rolled & ready!

Let it rest for another 20 minutes until they puff up. Brush the top of these rolls with olive oil or melted butter or milk or cream or egg wash. Sprinkle some Italian seasoning or any dry herbs of your choice generously over the top.

Bake them for 20-25 minutes at 200C or until the bites are golden brown and cooked.

Serve hot with any dipping or sauce of your choice or as is.

Ingredients

  • 1 pound ball Pizza Dough (Homemade or buy)

For the stuffing

  • 1 large Onion, finely chopped
  • 1 Bell pepper, finely chopped
  • 23 TBsp Parsley or Coriander leaves, finely chopped
  • 1 Tbsp Tomato Ketcchup (to bind everything & give an additional acidity)
  • 23 cloves Garlic, grated
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tsp Chilli Flakes
  • 1 tsp Oregano or any other dry herbs

Stuffing – others

  • Cream Cheese (optional)
  • Mozzarella or cheddar or any cheese you like, cut into bite size pieces
  • Pepperoni / Bacon / Ham etc. (*for a non vegetarian version)

For the topping

  • 23 tsp of mixed dry herbs of your choice (Example: Garlic Powder, Oregano, Thyme, Chilli Flakes, Black Pepper, Parsley etc.)
  • 23 TBsp Olive Oil / Melted Butter / Milk / Cream / Egg Wash

To serve

  • Tomato ketchup or Mayo or Pesto or any condiment of your choice

Instructions

  11. Lay them seam side down on a baking sheet or a baking pan (you can bake them together in a cake pan also. In this case, the rolls will bake together & you’ll have to pull them apart and eat).
  12. Brush the top of these rolls with olive oil or melted butter or milk or cream or egg wash. Sprinkle some Italian seasoning or any dry herbs of your choice generously over the top.
  13. Bake them for 20-25 minutes at 200C or until the bites are golden brown and cooked.
  14. Serve hot with any dipping or sauce of your choice or as is.
