For the Sweet Filling

  • 1/2 cup Jaggery
  • 1 cup Freshly Grated Coconut
  • 1/4 teaspoon Cardamom Powder (elaichi)
  • 2 Tablespoons Water
  • 1 teaspoon Ghee (Clarified Butter)

For the Rice Cover / Dough

  • 1 cup Fresh Rice Flour (preferably homemade)
  • 1 cup Water
  • 1 teaspoon Ghee (Clarified Butter)
  • 1/4 teaspoon Salt

Others

  • Ghee, to grease the pan

Instructions

For the Sweet Filling

  • Add jaggery to the pan. Heat on low heat. Jaggery starts to melt. Look for string consistency.
  • Add the coconut, elaichi and mix well. Fry for 2-3 minutes
  • Add ghee, mix well and let it cool

For the Rice Cover Dough

  • Bring 1 cup water to a boil
  • Add the ghee, salt and mix well
  • Turn off flame. Add rice flour and keep stirring. Mix till it comes together as a sticky dough
  • Cover and let the dough rest for 4-5 minutes
  • Transfer dough to a clean plate
  • Add 1-2 teaspoons of Ghee and knead the dough for 8-10 minutes. Knead to a soft and smooth dough.
  • Use as required to make the modak

Making of the Ukadiche Modak / Sweet Kozhkattai

  • Divide the sweet filling into equal, 1 Tablespoon measures and form neat balls. Set aside
  • Take lemon-sized balls of rice flour dough and roll well
  • Flatten the dough. Using your fingers and the thumb, form an even cup shaped form
  • Add the sweet filling in the groove / middle
  • Bring the edges together to the center by forming simple pleats. Seal on top tightly. If this is difficult, simply bring the edges to the top and seal it. Make sure the top is pointy – which is typical of any modak
  • You can also use a modak-mold to create even, neat-shaped modaks
  • Repeat with the rest of the dough
  • Grease the steamer with some ghee
  • Place all the prepared modak on the steamer
  • Close with lid and steam for 8-10 minutes or till the rice dough cover starts to look shiny
  • Remove and let it cool completely before serving
