Vegan Carrot Cupcakes

Homemade vegan carrot cupcakes topped with my easy cream cheese frosting.

Vegan Carrot Cupcakes Recipe | Easy Eggless Carrot CakeThese cupcakes score points both in the budget and taste departments. You use really inexpensive ingredients to make these and yet are presented with really soft and delicious cupcakes! I think its a win-win situation…. don’t you?!

If you’re a vegan you should probably skip the frosting out or use your own concoction for vegan frosting since I’ve not figured out that one yet! But… other than that, these cupcakes are completely vegan and tasty!

Vegan Carrot Cupcakes

Ingredients

  • 1/3 cup Maple Syrup / Powdered sugar (adjust for sweetness)
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon plain White Vinegar
  • 1/2 cup Water
  • 1/3 cup Vegetable Oil
  • 1/2 cup Grated Carrot
  • 1 cup All Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda

Optional – Cream Cheese Frosting


Instructions

  1. Line cupcake molds with liner. Preheat oven to 170 C (150 C if you have convection oven)
  2. In a bowl, mix together water, maple syrup / sugar, vanilla, vinegar and grated carrot together.
  3. Sift in flour, baking powder & baking soda. Mix to form smooth batter. DO not over mix or you’ll end up with tough cupcakes.
  4. Bake for 25 minutes or until toothpick inserted in the center comes or clean. Let them cool completely.
  5. Frost with cream cheese frosting if you want (Skip if you are a vegan)

Add grated carrot to the liquid and mix well

Sift in flour, baking powder and baking soda to the liquid. Mix to form a smooth batter

Fill cupcake molds three fourths full with the cake batter

Bake the cupcakes for 20-25 minutes or until fully cooked through. Let it cool completely. Have it as it is or frost with cream cheese frosting and enjoy!
