Vegetable Pulao with Raita

  • 1 cup Long Grained Rice (Basmati)
  • 1 cup Sliced Onions
  • 2 cups Mixed Vegetables (*See Note below)
  • 23 Green Chilli, slit in middle (remove seeds for less heat)
  • 1 teaspoon Ginger, grated
  • 1 Garlic Clove, minced
  • 1/4 cup Dry fruit & Nuts, chopped roughly (Raisins, Cashew, Almond etc.) {Optional}
  • 1 inch Cinnamon Stick
  • 34 Cloves
  • 2 Bay Leaves (Tej Patta)
  • 23 Tablespoons Oil or Ghee
  • 2 teaspoons Salt (adjust to taste)
  • 1 and 1/2 cups Water * (adjust according to type of rice)
  • 45 tablespoons chopped Coriander / Cilantro Leaves

Note – Mixed vegetables that you can use – (slice thin and long)

  • French (Green) Beans, Bell Pepper, Carrots, Green Peas, Cauliflower Florets, Broccoli, Corn kernels, Baby Corn, Potato cubes

For the RAITA (makes 1-2 cups)

  • 1/2 cup Onions / Cucumber – finely chopped
  • 1 cup Cold Plain Yogurt / Curd
  • 1/2 teaspoon Black Salt (adjust to taste) (*or regular salt)
  • 1 tablespoon chopped

Note – Amount of Water

  • For 1 cup of Basmati Rice, I use 1.5 cups of Water. Based on the type of rice you’re using and the desired texture, the amount of water you use will differ.


  1. Wash the rice under cold water till clean. Set aside
  2. In the pressure cooker, heat the Oil / Ghee. Add the cinnamon, cloves, bay leaf and dry fruits & nuts and saute for 30-45 seconds on medium heat till the aroma of spices starts to come.
  3. Add the green chilli, ginger, garlic and fry for another 20 seconds.
  4. Add the sliced onions and fry till they turn translucent.
  5. Add the rest of the mixed vegetables and fry for 1-2 minutes till they start to sweat and reduce a bit.
  6. Finally, add the washed & drained rice. Mix well with the vegetables.
  7. Add the water and salt and mix well. Let the water come to a boil.
  8. Close the cooker with the lid and put the whistle on. Let it cook on medium heat. After 1 Whistle, switch off the flame. Let the pressure release completely (15 minutes).
  9. Open the lid and fluff up the rice using 2 forks or back of a wooden spoon. Garnish with Coriander / Cilantro Leaves & serve!

For the raita

  1. Beat the curd / yogurt along with salt with a spoon for a smooth mixture.
  2. Add the finely chopped Onion / Cucumber and Coriander / Cilantro Leaves. Mix well and serve.
