Vegetarian Bean Chili is just the kind of healthy, comfort-food that you can imagine yourself having every night! Made with legumes, corn, and a whole bunch of seasonal vegetables, this Mexican one-pot dish is a crowd-pleaser!

Most recipes on the internet call for a can of kidney beans. I usually like to cook my beans from scratch. (here is a video tutorial). If you do the same, make sure to cook them until they are cooked, but still have a bite to them. This way, when you cook them with the veggies and spices for a longer time, you will end up with a soft, creamy pot of beans (rather than a mush!)

Ingredients

  • 1 Kidney Beans – canned or pre-cooked
  • 3 Tablespoon Vegetable Oil
  • 1 cup Sliced Onions
  • 1/2 cup diced Carrots
  • 1 cup diced Bell Peppers
  • 2 cloves Garlic, minced
  • 1 teaspoon Tomato Paste or Ketchup – optional
  • 1 teaspoon Sugar or Brown Sugar
  • 1 teaspoon Cumin Powder (Jeera)
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Red Chili Powder / Hot pepper flakes (Adjust for spice)
  • 2 teaspoons Dried Oregano
  • 1/2 teaspoon Thyme
  • 1 Tablespoon Salt (adjust to taste)
  • 1/4 cup chopped fresh Cilantro Leaves

Optional

  • 1/2 cup Sweet Corn, cooked
  • 1/2 cup crumbled Tofu or Paneer (Cottage Cheese)

You can replace the kidney beans with black beans and add more vegetables to make this into a one pot meal.

Tip – Beans

  • You can use any kind of pre-cooked or canned beans. Do not add dry beans here. It will take a very long time to cook.

Instructions

  1. Heat oil in a pan and add the onions. Fry on medium heat till they are translucent.
  2. Add the chopped carrots and mix well. Add some salt and fry for a few minutes to make the veggies sweat.
  3. Add the chopped bell peppers and fry for a couple minutes. Then add the minced garlic and mixed spices. Mix well and fry for 3-4 minutes on low heat.
  4. Add the crushed tomato / tomato puree and mix well. Let it cook for 10 minutes until the raw smell of the puree goes away.
  5. Add some canned beans / cooked beans and mix well.
  6. Add some vegetable stock or water. Taste the water and adjust for seasoning if required. Close the pan with a lid. Let it cook on medium heat for 20-30 minutes or until the mixture has thickened.
  7. Open the lid and garnish with some chopped coriander leaves and mix well.
  8. You can add some grated cottage cheese or tofu and mix well if you want
  9. Serve the chili as is or with a pot of rice or bread.

To Store

  1. You can refrigerate it for up to 5-7 days. Add a little water or stock and reheat before serving
