Made with coriander, cumin and fennel seeds, this kachori masala powder is a quick spice-mix that enhances the flavor of the kachori filling!

- 2 Tbsp Coriander Seeds (dhania)
- 1 Tbsp Fennel Seeds (saunf)
- 1 Tbsp Cumin Seeds (jeera)
Add all ingredients to a pan, dry roast for 2-3 minutes, shaking the pan frequently to prevent burning. Roast until the seeds turn aromatic. Switch off the flame, and let them cool completely.
Add to a spice grinder or mortar pestle. Grind to a smooth powder. Use as needed. Store in an airtight jar and use within 3 mmonths.
