Sev Puri - a classic Indian Chaat Dish

A popular vegan Indian street snack, Sev Puri is like a canape and made with puris (crispy discs) are topped with chutneys and garnishes.

Ingredients
  

You can assemble as many puris as you want. The recipe below is for 4 puris

  • 4 pieces flat Puri or Papdi
  • 4 tsp boiled & mashed Potao
  • 4 tsp finely Chopped Onions
  • 4 tsp Green chutney or Cilantro Mint Chutney (adjust to taste)
  • 4 tsp Sweet Chutney or Tamarind Dates Chutney (adjust to taste)
  • 4 tsp Sev (fried gram flour noodles)
  • 2 tsp fried Chana Dal (split chickpeas) - optional
  • 1 Tbsp finely chopped Cilantro or Coriander leaves
  • 1 Tbsp roasted and broken Peanuts (optional)
  • 1 Fresh Squeeze of Lemon
  • 1/2 tsp Chaat Masala Powder or Black Salt (adjust to taste)
  • 1 Tbsp sliced Raw Mangoes (when in season!)

This recipe only contains the Main components needed. Please refer to separate posts on how to make the chutneys

Instructions
 

  • Place the puris on a plate.
  • Add some boiled potatoes on top of the pooris. Sprinkle some chaat masala (or black salt) over the potatoes.
  • Top it off with finely chopped onions. It doesn't have to be perfect, but try to get the onions on top of eac puri.
  • Add the chutneys on top of the veggies. You can add more or less depending on your preference.
  • Top off with some fried sev, chana dal, peanuts and cilantro. If raw mangoes are in season, add some thin slices as a garnish too.
  • Finish off with a fresh squeeze of lemon juice and serve immediately.
