Ukrainian Garlic Bread Rolls, Pampushky, are soft and fluffy yeast buns perfect as an appetizer, tea-time snack or a side to a main meal.

Pampushky or Pampushka is a small sweet or savory yeasted bun popular in the Ukrainian cuisine. The most typical version for this recipe is one with an intense garlic flavor. While these garlic rolls are traditionally baked, they can also be fried.

The word pampushka can be used to describe a cute and gorgeous plump person, and that perfectly defines what these rich garlic rolls look like. The process of assembling the pampushky rolls is long, but not difficult. It requires overnight proofing, that adds the quintessential fluffiness to the rolls. All you need to assemble these rolls are the dough, the garlic oil and parsley. The dough is pretty basic, and just needs enough time to rest, to let the yeast work its magic.

I’ve tried to make the pampushka with regular pizza dough, but it doesn’t turn out as fluffy. The starter made with flour, sugar and yeast is crucial to the texture of these buns. The starter is allowed to slowly rise in the refrigerator overnight, which makes it bubbly and stretchy. Do not add salt to the starter, as it kills the yeast. When you’re making the dough, add the starter along with the flour and salt. You wont need as much water since the starter is pretty liquidy. Just add a few tablespoons of warm water if needed.

Pampushky (Ukrainian Garlic Bread)

Soft & fluffy garlic rolls



For the Starter:

  • 1 cup All Purpose Flour or Bread Flour
  • 2 tsp Fine Sugar
  • 2 tsp Instant Yeast
  • 1 cup Lukewarm Water

For the Dough:

  • Starter
  • 1.5 cups All Purpose or Bread Flour
  • 3/4 tsp Salt
  • 12 TBsp Water (adjust as needed for the dough) 

For the garlic bread:

  • Dough
  • Neutral Vegetable Oil or Melted Butter or Olive Oil
  • 34 Garlic Cloves, minced
  • 23 TBsp chopped Parsley 


For the Starter:

  • Add the dry ingredients: flour, sugar, instant yeast & mix well
  • Add lukewarm water and mix well to form a stretch batter
  • Cover the bowl & let it rise slowly in the refrigerator for 5-6 hours or overnight

For the Dough:

  • Add the starter to a large mixing bowl
  • Add rest of the flour, salt and some warm water if needed
  • Knead to a soft dough, divide into equal portions

For the garlic bread:

  • Grease a 6-8″ round baking pan with oil
  • Roll each ball of dough into a neat ball, and place in the baking pan
  • Place one in the middle of the pan & the rest around, leaving about an inch or 2 between the rolls (they will rise!)
  • Brush the top with some melted butter or oil, cover loosely & let it rest in a warm spot for about 45-60 minutes or until the rolls have doubled in size
  • Brush the top with some olive oil or butter & bake at a preheated 375F / 180C oven for 20-25 minutes or until the top is golden brown, rolls are well cooked
  • Garlic Parsley Topping: While the rolls are baking, add minced garlic to cold butter or olive oil & bring it to a slow heat (microwave or simmer for a couple minutes). Let the mixture cool. Then add chopped parsley & mix well
  • Once the pampushky rolls are out of the oven, immediately brush with the garlic parsley oil. Generously brush all over, including the creases
  • Let the rolls cool down a bit. Then loosen edges and serve them warm.
  • These rolls are best serve fresh out of the oven. But you can also make them ahead of time. Then right before serving, warm in the oven (180C / 375F) for a few minutes. Microwaving might make them less fluffy and more chewy.
