Both are south-indian versions of cooking vegetables. While a Poriyal is a vegetable stir-fried with some oil and spices, a kootu is a bit more elaborate and is cooked in a broth with lentils, then spiced with some freshly ground spices and coconut. Both can be served with rice or roti.
